Brewster’s closes after a decade

To the shock of pizza fans all over the Wimberley Valley, Brewster’s Pizza closed its doors for the final time on Sunday. The business has operated for 10 years.

“Working with our family has been the joy of our life, and remaining best friends has been one of the most successful features of our family business experience,” Holly Collie, whose family owns Brewster’s Pizza, said. “We are so thankful to the Wimberley Community for their patronage and support! God has used Brewster’s Pizza to introduce our family to so many wonderful people and build lifelong relationships...including three of our sons wives! We are blessed to be welcoming our fourth grandchild this coming year and want some more time to enjoy them. As successful as Brewster’s has been as a business, we feel that it’s the people we have met that has been the true treasure.”

The Collies have been one of Wimberley’s treasured families for years. Patriarch Bruce Collie brought the cachet of the NFL to town after his years playing for the San Francisco 49ers and Philadelphia Eagles. With 13 children active in the community, the Collie family has been tough to miss over the last decade or more.

But don’t worry, they aren’t leaving town. They plan to continue operating Trio Bistro on the Wimberley Square as well as Papa Hoo’s Popcorn. In the meantime, they will be working to improve the property at The Junction where Brewster’s was located.

“Be looking forward to new and exciting things happening at The Junction,” Collie said.
