New restaurant

Well, the wait is over for trying to guess what kind of restaurant would go on the Square’s building that formerly housed Marco’s Italian Restaurant. It is not Italian, but an eatery that will please the palate just the same.

Kimberly’s in Wimberley is the name of the new restaurant, and the décor is a big difference from what was there. The bright yellow walls give it an American air and that’s the type of food they’ll serve, “American with a twist,” Kimberly Dwyer of Kimberly’s in Wimberley said.

She and her husband Eddie will have their grand opening on September 5. They’ll be open Tuesday through Sunday and closed on Monday. They will be serving Choice USDA beef.

“The meats and produce are as local as can be and as fresh as possible,” Eddie said. “Our food is 90 percent made from scratch, including our own mustard and whipped cream.” Texas seafood is also featured.

Eddie grew up in the family restaurant/bakery business and worked for large corporate restaurants. He has degrees in Business and Hospitality Management. Kimberly is still a practicing nurse.

‘My wife and I were looking at franchises and we were here on a getaway. We were eating at Marco’s and saw it was for lease. We saw it would be an easy turnaround so we put the deal together,” Eddie said. “It was a meant-to-be kind of deal.”

The menu offerings show the ‘twist’ on American food. “Take for instance our BLT, it’s made on a cheddar-jalapeño waffle,” Eddie said.

Other menu items include breakfast, featuring Dr. Canales Breakfast Waffle Sandwich with two eggs, ham and cheddar cheese on a Parmesan waffle.

Starters featuring Kimberly’s Giant Pretzel with that homemade mustard, Soups and Salad, Entrees, Sandwiches and Burgers, and heavenly Desserts, especially the Bella’s Strawberries and Cream Waffles.

It’s a restaurant like no other in Wimberley and definitely worth the wait. Now that it’s finally here, stop in and try American food with a twist.
