Cave-aged beer released

Roughhouse Brewing, a family-run farmhouse brewery located in the Hill Country between Wimberley and San Marcos, is releasing its long-awaited Texas Cave Ale--Premiere, which was fermented in a natural, underground limestone cave.

Roughhouse brewed the beer back in February 2020, before COVID-19 took hold, in collaboration with Jester King Brewery using their mobile coolship and aged hops. “We wanted to make a beer that honored the natural space we were given, and a spontaneously fermented beer using all Texas ingredients was the most honest way to do that,” said brewer/founder Davy Pasternak.

This beer marks the rst of a series at Roughhouse, titled UNDERGROUND series, whereby beers will be 100% cave-aged and often spontaneously fermented. Believed to be the rst beer aged in a natural cave in Texas, Premiere is a complex showcase of natural fermentation guided by the microbes present within the cave and in the air on that winter’s night atop the coolship vessel.

The Premiere Texas Cave Ale Release Party is set for Saturday April 10th at the brewery. Customers are limited to two bottles per person due to the limited quantity of beer available. Brewer Davy Pasternak will take the stage to elaborate about the beer and the cave excavation process. Customers can also watch a virtual sneak peak of the space and learn more about the beer from their tables, since the actual cave is not accessible to the public.
