Baker joins forces with Fair Dinkum, attracts Google

Baker Steve Kennon has rolled up his sleeves to bring his healthy recipes to the Fair Dinkum coffee shop on RR12. Kennon’s philosophy, which is sure to appeal to customers with food sensitivities, centers on using a minimal number of high quality ingredients. His bakery items are made without added preservatives, gums, artificial flavors or extracts and his paleo items are grain free.

Kennon’s ingredient list is impressive: pure vanilla bean powder instead of extract, the finest cocoa powder, ‘00’ wheat flour, cage-free eggs and organic milk. For his gluten-free, vegan and cane sugar-free items, he uses cassava, oat or almond flours. For sweetening, he uses honey, or date products – syrup, paste or sugar. Other ingredients include almond milk, almond butter and pure avocado oil.

“Thanks to Fair Dinkum owners, Chris and Hailey Clark, I can offer my healthy treats and paleo items alongside their craft coffee, breakfast and lunch menu,” said Kinnon, a former aerospace engineer who for more than 40 years wrote software to simulate fluid and solid mechanics. During the pandemic, he took up the art of bak- ing and found a new passion that allowed his creative talents to flourish.

During our interview, Google employee Austin Strobel took photos of the coffee shop for an “Immersive View,” a 360-degree virtual tour to be integrated into Fair Dinkum’s Google Maps search results.

“Google has been running a temporary program to help selected small businesses promote themselves,” said Strobel. “Through the program, Google offers businesses access to new marketing features that are still in development to help them gain more visibility. In return for using these free features, Google requests feedback from the participating businesses.”

New at Fair Dinkum, is a cozy coffee lounge where locals can hang out and hear music. Several weekends a month they’ll host live music under the banner of “The Cavern.” They are also are hosting a virtual, live cooking class from Italy, every two weeks for the Fall and Winter season by chef friend Luisa Zecchinato.
